One of the most popular and beloved Filipino dishes is adobo, which has even been called the country’s unofficial national dish. Adobo has been a part of Philippine cuisine, whether as a dish or cooking process and has had different variations that make it more delicious. But if you’re looking for a different take on this classic Filipino dish, award-winning celebrity chef Sou Del Rosario has one of his own.
In an episode of Quaranchef on Plus Network, Del Rosario revealed a dish called Adobo Duck with Orange, which gives a twist to this familiar Filipino dish.
Adobo Duck with Orange
– To start this dish, you need to pour cooking oil into a frying pan and add the duck breast. Make sure that the side of the skin will be cooked first.
– Then, you need to add soy sauce, white vinegar, peppercorn, bay leaf, minced garlic, and chopped onions. Mix the ingredients and wait for it to cook for 10-15 minutes.
– Afterward, you will add a tablespoon of orange, which adds flavor and gives a twist to the adobo. Then, you need to add some water and let it simmer for another 5 minutes.
– Once it is cooked, you need to separate the sauce from the duck breast using a strainer. Then, you need to place the duck breast back in the pan and add cooking oil. Cooking the duck breast again will make its skin crispier.
– After it is cooked, you need to slice the duck breast into smaller pieces. Then, you will place it on a plate and add the sauce of the adobo to it.
– You can add some more orange to it to enhance its flavor and then add different garnishes.
Once this is done, you can enjoy this new take on the classic adobo dish! According to Del Rosario, what’s good about preparing adobo is that it can be cooked and served at any time of the day, it can be cooked with different meats, and it can be eaten the following day. The adobo’s taste also improves after some time because the flavors will be enhanced, while the vinegar will keep it fresh.
